In this room are:reception room, fermentation room, pressing and  laboratory. The room has six fermentation tanks all stainless steel: 3 tanks of 3000 liters, 1 tank of 1000 liters and 2 tanks of 5000 L. There are also cooling equipment for temperature control of fermentation. The press is horizontal plates with capacity of 1200 L with a developer and a probe by which we regulate the pressure, but for us is more important when we press is tast all the time the wine and when we note a green taste or anithing without quality, say stop the press. 
In this room, too there are a small stemmer which follows the scrape of the berries.
